Key Purpose and Responsibilities:
To manage the site services to clients in accordance with agreed client service standards and within budgetary limits.
To ensure optimal management of all site resources in accordance with Company standards and policy and in compliance with health, safety, quality and risk best practice and regulatory requirements.
Manage and take responsibility for closing out all operations liaison with Head and Regional Offices.
Manage catering operations in accordance with client service standards;
Site Administration: Ensure accurate and timeous completion and submission to Corporate Office of all weekly administrative and accounting returns for the site units including:
order forms, invoices and cash slips
stock take sheets, daily issue sheets and broadsheets.
Manage the budget planning and control process for the site ensuring monthly analysis of expenditure and revenue against budget and instituting the appropriate corrective action, where necessary.
Health and Safety Compliance: Ensure that the site facilities and equipment are clean and orderly and conform to health and safety standards.
Ensure maintenance of areas that require attention.
Resolve daily maintenance and urgent maintenance issues in conjunction with the responsible maintenance personnel.
Stock control: Ensure that stock is issued on a daily basis to the kitchen staff, according to the number of people to be fed and the applicable menu. Ensure there is sufficient stock in the stores as is required in terms of the number of people to be fed and according to menu specifications. Ensure all stock is requisitioned in the correct quantities and at the correct quality. Manage all deliveries received are in accordance with the quantities ordered, the quality required and the agreed price. Where stock does not meet this standard, the Stores Manager must ensure that a credit note is issued by the supplier.
Inspect the units, products and service on the site on a regular basis.
Pro-actively identify and explore potential value adding business opportunities and liaise with the Operations Manager, Operations Executive and COO in this regard.
Ensure customer retention, account growth and sound client relationships.
Assist in the initiation, presentation and negotiation of key projects / client projects.
Lead the site team towards meeting operational standards and targets through regular communication and utilisation of the full organisational talent management tool set.
Manage training and development of the site team through utilising available training opportunities or contributing to the development of new training solutions in collaboration with site, regional and national training specialists.
Conduct regular performance appraisals with subordinates and ensure that the process is cascaded throughout the site team.
Conduct site meetings and ensure that records are kept and shared across the team and that action plans agreed to within team meetings are delivered upon.
Take ownership and accountability for tasks and activities and demonstrate effective self-management in terms of planning and prioritising, and self-development.
Required Knowledge and Qualifications:
Appropriate tertiary qualification in commerce, business management or similar and at least 10 years’ experience in a related environment (preferably feeding in excess of 500 people) of which 4 should be in a camp management capacity
OR
At least 12 years’ experience in a related environment (preferably feeding in excess of 500 people) of which 5 should be in a senior camp management capacity with demonstrable competence in the strategic, business and commercial aspects of the management role.
